Coconut sugar is an important ingredient in Southeast Asian cuisine and medicine. At Pancake Organics, our coconut sugar is made following traditional Indonesian customs.  Everyday, our farmers climb the coconut trees and collect the coconut sap that seeps out of the flower blossom. On average, each farmer climbs 15-20 trees, twice a day. The farmers transport the coconut sap to the kitchens, where the sap is heated in multiple containers for several hours. Over the course of 4 to 5 hours, moisture from the sap evaporates and the sap takes a granular form. To meet our quality a standard, the sap is then inspected, oven dried, metal detected, sieved, and lab tested to ensure consistent particle size and texture. No additives or preservatives are added during the cooking process, ensuring that the sugar is made naturally from start to finish.
